Martha's Peach Crumble

Last week we went to a pick-your-own peach orchard. Once home, I realized we had more peaches than we'd ever be able to eat so I browsed through The Martha Stewart Cookbook: Collected Recipes for Every Day for a recipe. The Peach Crumble was so delicious that we made a second batch the next day.


Peach Crumble
Makes 4 servings

8 ripe peaches, pitted and sliced
Juice of 1 lemon
Large pinch of ground cinnamon
Large pinch of freshly grated nutmeg
1/2 cup all-purpose flour
1/2 cup firmly packed dark brown sugar
1/4 pound (1 stick) unsalted butter, chilled and cut into thin pieces
1/4 cup quick-cooking oats
Heavy cream (optional)

Preheat the oven to 375F.

Arrange the peach slices in a buttered shallow baking dish. Sprinkle with the lemon juice, cinnamon and nutmeg.

In a small bowl, combine the flour and brown sugar. With your fingers, blend the butter into the flour-sugar mixture until it resembles coarse meal. Stir in the oats and sprinkle the mixture on top of the sliced peaches. Bake until the peaches are soft and the topping is brown, about 25 minutes.

Serve warm with fresh or whipped cream, if desired. [or ice cream!]

Made this last night for a picnic in the park. I reduced the butter by half and added a half cup of blueberries, which gave the crumble a extra dimension of flavour, colour and texture. I was generous with thos "pinches" of cinnamon and nutmeg. And don't forget the whipped cream (crumbles love cream.)

Made this last night for a picnic in the park. Added a 1/2 cup of blueberries for an extra dimension of colour, flavour and texture. Reduced butter by half and was generous with those "pinches" of spice. Whipped cream essential.

I made this for a picnic on the weekend. I added 1 cup of blueberries to the mix and reduced the butter by a half. It was a big hit. A new staple for me.
Large flake oats make the crumble topping even prettier. Whipped cream necessary!

Delicious! I peeled the peaches, using that old "dip in boiling water for 1 minute" trick.

Company came over unannounced so I had to whip up something. I had all ingredients for this and put it together in 5 min. My family cannot stop talking about it. I topped it with fresh whipped cream...YUM!

delicious, added an extra peach to fill out the dish. also I think next time I'll make twice the crumble. with a tad less sugar. thanks!
