As I was reading through the latest issue of Body + Soul, the recipe for variations of Pumpkin Butter caught my eye. Pumpkin is loaded with fiber and beta-carotene. Served with bread and cheese (or with pretzel stick dippers for little hands), it's a delicious and healthy fall snack.
This pumpkin butter recipe mixed up quickly (especially since I substituted canned pumpkin as suggested) and was a nice afternoon snack. It wasn't quite as creamy as I had hoped and I think I might enjoy one of the variations (Apple-Cinnamon or Cardamom-Clove) better, but I wouldn't hesitate to use this recipe again for an easy snack.
